Delicious Chicken Burgers
1/4cup washed and finely chopped leek
1 medium onion, finely chopped
2 medium carrots, peeled & grated
1 large zucchinni, grated
1 1/2 tbsp of vegetable oil
2 boneless, skinless, chopped chicken breasts
1 apple, peeled, cored & grated
1 Chicken stock cube (or a sprinkle of Vegeta) try to find MSG free stock cubes
1 tbsp finely chopped parsley
Salt & Pepper to taste
1 1/2 cup of breadcrumbs
Coating:
All purpose flour
2 eggs lightly beaten
Seasoned bred crumbs
Vegetable oil for frying
Saute leek, onion, carrots & zucchini in the vegetable oil for 3 minutes, then mix together the remaining ingredients and chop in food processor for a few seconds. Form into 16 burgers using floured hands,
Coat in flour, then egg, and then seasoned bread crumbs and saute in vegetable oil until golden and cooked through. *About 6 minutes on each side.
I think this would go nice with the Baby recipe of the day, these are delish' & great for the family

This sounds yummy, I will make these today and post a pic'. I just need to get some leeks & zucchini's. I wonder if I can use apple sauce instead of chopped apple? I dread for some crazy reason peeling apples but the apple would be nice for texture.
I also used Organic Whole Wheat flour to make it healthier in exchange for white flour.
Try to use organic whenever you can :)
These are so good. Charlies still sleeping & I've eaten two of these.
