Recipe of the Day for Baby- Dried Apricot Puree

From my favorite book Sprout Right: Nutrition from Tummy to Toddler.  I've always wanted to try dried apricots for my boy but never knew how to really do it and believe it or not at the time I couldn't find anything online so I picked this for todays recipe.

Dried Apricot Puree ( for 6-9months)
1 cup of dried apricots (unsulphured)

1. Put apricots on a saucepan and cover with filtered water. Simmer until plump and softened, about 10minutes
2. Transfer all contents including any remained water to a bowl; puree until it reaches the texture of a smooth, thick soup.  If you're freezing the puree you might need an extra 1/4 cup water for it to freeze solid
3. Serve alone or combine with pears, papaya, avocado and any other fruit.
Makes about 3 cups

Buy organic and unsulphured dried apricots-they are brown because they don't contain suphites, which can trigger asthma and gas.  Bright orange apricots contain sulphites.  Dried Apricots also have a laxative effect. Courtesy of Sprout Right
