A yummy hot breakfast cereal for mom and baby.
2 cups of water
1 cup of amaranth, rinsed in a fine sieve
2 pears peeled, cored, and chopped
2 apples, peeled, cored and chopped
1/4 cup frozen blueberries
1 tsp cinammon
1 1/2 inch(1cm) piece of ginger root, finely chopped
1.Combine all ingredients in a saucepan.
2.Bring to a boil, cover and reduce heat to a simmer, stirring often, until amaranth is tender, about 20 minutes. Puree to desired consistency. Makes about 3 cups
*Amaranth has a sticky texture and care should be taken not to overcook it as it can become gummy.
After this dish is frozen or refridgerated, you'll need to add more water to thin it out when reheating.
