Strawberry Watermelon salad with feta

This will be one of the best salads you’ll make this summer!  It is simple and delicious and even enjoyed by kids.  But seriously.  How could you not like strawberries and watermelon?  
I remember when I first heard of watermelon and cheese being used together and I thought what the heck? It was delicious but you can’t use just any cheese.  It was watermelon and halloumi.  When I moved to Toronto at the tender age of 18, I worked in a greek restaurant and was introduced to many of the culinary delights in Toronto’s Greek Town.  It was amazing.  
So as I rummaged through the most recent issue from Longo’s Experience I saw this excellent recipe for a Strawberry Watermelon salad with feta.  In the recipe it called for grilling the strawberries but to be honest, I skipped it.   I also love Macedonian Feta.  It’s sheeps and cow milk- not too salty and blends nice with all the flavours.  The green onion adds a nice earthy flavour as it all meshes together.  You can try adding basil or even coriander if you want a punch of flavour of fresh herbs but I kept mine pretty simple.  I think I’ll add basil next time, although I do love coriander too!
strawberries-om-om-fruits-red-82978-largeAll you need is fresh strawberries, watermelon, cucumber, green onion, olive oil, honey, lemon, salt and pepper.   It’s simple, delicious, cooling, great to be to a BBQ or afternoon snack with friends over a crisp glass of white wine and grilled seafood.  Are you inspired yet?

Strawberry Watermelon Salad with Feta

Ingredients
  1. 6 cups of whole strawberries, hulled and stemmed
  2. 1 tub grape tomatoes
  3. 1/4 cup of honey
  4. 1tbsp each of lemon juice and olive oil
  5. 1/2 salt and pepper
  6. 3 cups of cubed seedless watermelon
  7. 1 chopped cucumber
  8. 2 cloves of garlic, minced
  9. 4 green onions
  10. 1/4 cup of cilantro
  11. 1 cup of feta cheese (I prefer Macedonian Feta cheese)
Instructions
  1. Make the dressing. Combine honey with lemon juice, olive oil and s&p. Whisk and put aside.
  2. Chop strawberries, watermelon, tomato, cucumber, green onion, garlic.
  3. Pour the dressing on top, mix and top with feta.
If you want to grill
  1. Grill over medium heat turning occasionally, about 4 minutes until the berries are softened and slightly charred. Toss the berries and tomatoes with honey mixture while still warm then add the cucumber, garlic, herbs and green onion and sprinkle with feta.

    Saving this recipe, thank you for sharing. I often have just a slice of watermelon and feta, but have never made a whole salad. This one sounds delicious.
