Pear & Parsnip Soup

A nice soup to treat and soothe your tummy.  I just made this for dinner tonight to be enjoyed along with some roasted chicken thighs and it was perfect harmony.  Now that it’s September I like to start my soup repertoire and I stumbled upon Pear & Parsnip soup that my mom wrote out as I was going through my recipes.  
Parsnips are high in fibre, it’s good for the digestive system, it’s got magnesium, folate and may help in reducing blood pressure and aid in weight loss.   Pears are high in vitamin C and K, good for the heart too and fibre.  Sounds like a healthy bowl of deliciousness.

Pear & Parsnip Soup

  1. 2tbsp of butter
  2. 1/2 cup of chopped onion
  3. 1 garlic clove
  4. 2 ripe pears, halved
  5. 1 large potatoes, peeled, cut and cubed
  6. 1lb parsnips, peeled and chopped into cubes
  7. 4-5 cups of chicken broth(or vegetable)
  8. 1/4 to 1/2 cup of cream (18%)
  9. Salt and pepper to taste
  1. In a large saucepan, saute in onions in butter. Add garlic and pears. When soft, add chicken stock, potatoes and parsnips. Cook til tender. Add cream.
  2. Transfer soup to a blender or food processor and puree. Add additional stock if needed and salt and pepper to taste.

    Sounds like an interesting combination. We do like parsnips so might have to give it a try.
