Peanut Butter Marshmallow Bars

Have you ever had Peanut Butter Marshmallow Bars?  They are the best treat that gives you salty and sugar deliciousness in one simple bar.  I haven’t had this bar in well over 30 years.  Back in the 80’s this was the one treat I’d find at every holiday party and birthday party.   Only multicoloured marshmallow was used more often than plain.  I’ve been looking for this recipe and I found it in an old 80’s cookbook from my nursery school!  This takes only minutes to make and will sure be a household favourite.  Check it out below.

* I am going to try this with coconut oil instead of butter next time and maybe almond butter.  I’ll attempt to make a “healthier” version but  I bet chocolate chips would be just a good as butterscotch!  If you make it, please come back and comment and let me know how it was! Ingredients
  1. 1/2 cup unsalted butter
  2. 1 bag of butterscotch chips
  3. 1/2 cup peanut butter ( I used Kraft natural peanut butter)
  4. 1 bag of marshmallows ( I used half a bag)
Instructions
  1. In a pot gently heat butter, butterscotch and peanut butter.
  2. Once melted, remove from heat. Line a 11 x13 baking dish with butter or you can try just using wax paper.
  3. Fold in the marshmallow's into the peanut butter mixture and then pour batter into the baking dish. Cover and place in the fridge for 30 minutes.
  4. Cut in squares and enjoy!

    These are known as Confetti squares in certain circles. I always make a beeline for them whenever I see them at Christmas time. I always see them at potluck-type gatherings and Christmas craft fairs. I’ve had to stop myself making these as I’ll obsessively eat them to the exclusion of all other foods. Which isn’t necessarily a good thing, nutrition-wise :0

    I do like the look of these but I’m afraid I don’t like peanut butter so would avoid them. Any suggestions for an alternative for the peanut butter?

    I use a whole bag of marshmallows, but next time I will only use half a bag. There will be more of the good stuff. I can almost taste these.
