Coconut Oil Fudgie Brownies with Enjoy Life {Recipe}

mix_beach_bash It’s Saturday morning and traditionally the weekend is my baking day and I catch up on my cooking shows, I go through my foodie magazines and save my favourite pages.  I love the weekend for all things food as I prep for what to cook next week.  I’ve been looking for a great recipe to feature for my Enjoy Life post and here it is!   Coconut oil brownies with NO EGGS and NO BUTTER.  Is it possible? Yes.  Yes it is.  

All you need is coconut oil, milk, cocoa, vanilla, mini chocolate chips, semi-sweet chips, sugar and coffee or hot water.  
Here’s my recipe.  Of course, you don’t have to use organic ingredients.  It’s just my preference.   What I like about Enjoy Life mini chips are the ingredients which are simple. It’s brown sugar, cocoa mass and cocoa butter.  That’s it.  Now Soma Cocoa.  Amazing and worth a trip to the Distillery here in Toronto to get it or the Queen St location.  Do call ahead to make sure they have it in stock. $12


  • Coconut Oil Fudgie Brownies
    An egg and butter free recipe made with healthy coconut oil.

    1. 1/2 cup coconut oil
    2. 3/4 cups semi sweet chocolate chips (Enjoy Life brand, naturally!)
    3. 1/2 cup cocoa powder (Soma Cocoa, quality ingredients really kicks it up a notch)
    4. 3/4 cup granulated sugar
    5. 1/2 cup organic milk ( I used whole milk )
    6. 2 tablespoons brewed coffee (or hot water)
    7. 1 cup all-purpose organic flour
    8. 1/2 cup mini chocolate chips (Enjoy Life Mini Chips)
    9. 1/4 tsp icing sugar to sprinkle for decoration (optional)
    1. Preheat oven to 350F
    2. On the stove, gently heat the coconut oil, vanilla and chocolate chips until melted. Or in a large glass bowl, melt the coconut oil, vanilla and chocolate chips in the microwave for about 60 seconds, stirring halfway through, until melted and smooth.
    3. If making on the stove, turn the element off and stir in cocoa powder and sugar. Add milk and coffee (or water) and stir until well combined. Stir in flour and walnuts. Pour into a greased 8″ square pan and sprinkle with mini chips. Bake 30-35 minutes or until toothpick inserted into the center and it comes out nice and smooth.
