Cheddar Apple Muffins

Ingredients

  • 3 cups Flour
  • 2/3 cup Sugar
  • 4 tsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Cinnamon
  • 2 cups Grated Cheddar Cheese
  • 2 Eggs
  • 1 cup Apple Juice
  • 1/2 cup Butter (melted)
  • 2 cups Peeled, finely chopped apples

Instructions

  1. Preheat oven to 375F.  Combine flour, sugar, baking powder, salt and cinnamon in a large bowl. 


    Mix in cheese and beat eggs in a medium bowl.  Add apple juice, stir in butter and apples.  

    Add all at once to flour mixture, stir just until all moistened. 

    Fill greased muffin tins.  Bake for 25-30 minutes.  Makes 2 dozen.
