Simple Spaghetti with Chicken, Parmesan and Mozzarella

Schools out and it’s winter break.  Are you coming off the Christmas high? Are the kids getting stir crazy already? Well, if you’re out and spending the day enjoying those Boxing Day sales and exchanging your gifts from Santa, I have a quick and easy meal you’re going to love!  You’ll have to ready in 15 minutes and it serves 6.

Pronto Spaghetti - Chicken Parmesan & Mozzarella

  1. 1 box Barilla® Pronto™ Spaghetti
  2. 1 cup chicken broth
  3. 2 tablespoons extra virgin olive oil
  4. ½ cup Barilla® Tomato & Basil sauce
  5. 2 teaspoons oregano, dried
  6. ½ cup mozzarella cheese, shaved
  7. 1 ½ cups rotisserie chicken, shredded
  8. ½ cup Parmigiano-Reggiano cheese, shaved
  9. Salt & Pepper to taste
  1. Pour whole box of pasta into a large skillet (approximately 12 inches in diameter).
  2.  Pour 1 ½ cups of cold water and chicken broth into the pan, ensuring that the liquid
  3. covers the pasta.
  4.  Turn the burner to high, then set your timer for 10 minutes (optional: add a bit of salt to
  5. taste).
  6.  Cook on high, stirring occasionally, until ¾ of the liquid has evaporated.
  7.  Add Barilla® Tomato & Basil sauce, oregano, mozzarella, and rotisserie chicken to skillet
  8. and continue to cook for approximately 2 minutes.
  9.  Remove skillet from heat and stir Parmigiano and black pepper. Serve immediately.
